Bridal Shower Favors: Wedding Cake Sugar Cookies

I recently threw a bridal shower for one of my best friends and made these adorable little cookies as favors! Not only is it great to give every guest a little something to take home but it is a fabulous table decoration as well! This sugar cookie recipe is my favorite for two reasons. First it is so yummy and second it is super easy! You can always make the dough ahead of time and keep it in the fridge until you are ready to roll it out and bake. The icing is also super simple and made from just 2 ingredients, confectioners sugar and water. I had bought the wedding cake cookie cutter online from amazon for a few dollars and have used it time and time again for friends bridal showers and bachelorette parties!

Recipe: Yields about 30 cookies

Dough
1 1/2 c butter, softened
2 c sugar
4 eggs
1 tsp vailla
5 c flour
2 tsp. baking powder
1 tsp. salt

Cream softened butter & sugar together in mixer.
Beat in eggs & Vanilla
Stir in flour, baking powder & salt.

Chill for at least 1 hour in fridge or until firm enough to roll out & cut.

Flour counters & rolling pin before rolling out dough.

bake on 400 degrees for approx 5-7 minutes. They cook quickly so watch them carefully! They should be just golden on top.

*let cookies cool completely before icing

Icing
1 cup of confectioners sugar & 2 tablespoons of water.
1 drop of red coloring for this shade of pink

*You will probably need to double this recipe but keep the sugar to water ratio. It should not be too thin or it will take forever to dry hard. I use a piping bag with a small round tip for the detail. Add more water if icing is too thick to pipe. Only add about 1/2 tsp at a time.

* I like to ice my cookies on cooling racks with parchment paper or wax paper underneath for easy clean up.
